Querétaro is not only known for its wine and cheese culture, the typical dish of the region is ENCHILADAS QUERÉTANAS. These are enchiladas with salsa verde, filled with chicken, potatoes and carrots. Ingredients:

  • 2 potatoes
  • 2 carrots
  • 1 chicken fillet
  • 1 clove of garlic
  • 5 green chillies (no seeds)
  • 16 tortillas
  • 4 tbsp fresh cream
  • Grated cheese
  • Olive oil
  • Salt
  • Water

Preparation:

Peel the potatoes and carrots and cut them into small cubes. Then cook everything in salted water until the vegetables are cooked. Steam the chicken fillet with a little salt in water for about 25 minutes and cut it into small pieces. Do not pour off the resulting broth. It will continue to be used. For the salsa, open the chillies to be sure that they no longer contain any seeds. The seeds provide the spiciness in the chillies, so be careful! Let the chillies soak in the chicken stock for about 5 minutes. To make the salsa, add a little broth, salt and a clove of garlic and let the salsa come to a boil. Now heat the tortillas in a pan with a little oil.
Then dip the still hot tortillas in the salsa and fill them with the mixture of vegetables and chilies and finally add the chicken. To serve, the enchiladas are again covered with salsa, a dash of cream and grated cheese.
